Pizza with Kale, Bacon & Caramelized Onions

serves 8

  • 3 tbsp olive oil
  • 1 pizza dough ball
  • 1 yellow onion, finely sliced
  • 8 oz Mozzarella cheese, grated
  • 1 bunch kale, chopped (or other greens)
  • 8 oz bacon, cooked and
  • 2 garlic cloves, minced crumbled
  • salt and pepper to taste & optional)
  • 1 pinch pepper flakes

Heat one tbsp of olive oil in medium pan over low heat. Add onion and cook slowly for 15 to 30 minutes until caramelized. Season with salt and pepper. Meanwhile heat 1 tbsp of olive oil in a large pan over medium-high heat and add the kale. When the kale begins to wilt, add garlic and pepper flakes (optional). Continue to cook until kale is soft and tender, remove from heat and add salt to taste. Roll out pizza, brush one tablespoon of olive oil on top and season with salt and pepper. Sprinkle with mozzarella, caramelized onions, kale and bacon. Cook in 500 degree oven until crust is golden brown. Sprinkle additional red pepper flakes if desired.
