Grilled Abalone

- for pairing with the Holly's Hill Vineyards
Roussanne

3 3" farm raised abs / person- cleaned, sliced in half and pounded until tender

Marinade
1/4 cup olive oil
1 tbsp white wine vinegar
1 tsp dijon mustard
1 tsp dried thyme
salt

Sauce
1/4 cup rice vinegar
1/8 cup seasoned rice vinegar
juice of one lime
1/4 bunch chopped cilantro
1 tbsp minced red onion


Marinade the abalone overnight.  Grill over very hot coals for about thirty seconds per side.  Take off and serve immediately with the sauce.  Yum!
